As a competition roper, restaurateur Blair Salisbury always enjoyed the before and after celebrations that surrounded any roping event. Especially good events were referred to as "Barn Burners" and consisted of food, drink and overall jubilee in a cowboy theme.
In 2004, the success of his other two restaurants (El Cholo Pasadena and Doņa Rosa Bakery & Taqueria) prompted
Salisbury to embark on a search for his next concept.
Salisbury found inspiration in the local Austin Texas barbeque eateries and quickly fell in love with the simplicity of the menus and process. Realizing a golden opportunity, he returned to Pasadena to scout a location and gather support.
A quick scout of Pasadena yielded an opportunity that couldn't be overlooked. Just two doors south of his El Cholo Cafe sat an old barn. As fate would have it, the existing business within had recently decided to close and his good neighbors e-central credit union were looking for a new tenant for the space. A few meetings and less than one year later, Barn Burner Texas BBQ was born!
